There were a few new items on the menu at City Heights Dining Hall on Thursday, March 12—and it was no ordinary fare. That’s because Caroline Glover, James Beard Award-winning chef and owner of the highly praised Aurora restaurant Annette, came to campus to show our dining staff some of her recipes.

With their regular meal plan swipes, students and employees could tuck into Glover’s take on a pork schnitzel a-la-cart, slider with coleslaw, or kale salad with chicken and a preserved lemon vinaigrette. “It gave the students a fine dining experience,” said City Heights Executive Chef Simon Mwansa. “It was a good experience for the cooks and myself, as well, to see what industry-leading chefs are doing.”

For CU Denver students Jonathan Runciman-Lachapelle and Nawras Al Lami, the kale salad was a highlight. “I think the dressing does it all, actually,” said Runciman-Lachapelle. “Ten out of ten,” And that wasn’t all. “I think very nutritional, too,” said Al Lami. “Having a pro chef come in … it’s obviously amazing.”
